About
Paul Boutinot's estate off Sir Lowry's Pass Road above Somerset West, 4.5 km from the sea, where just under 100 hectares of vines are farmed regeneratively beside 100 hectares kept for conservation. Its Sauvignon Blanc, Chenin Blanc and Rhône and Bordeaux reds ferment with wild yeast in a glass-and-concrete hilltop cellar that also houses Bertus Basson's Chorus restaurant and a lounge pouring six tasting flights. Osteria, an Italian deli and cheese bar, is at the farm entrance.
